Brazilian Rice
2 c long-grain
white rice
2 tbsp minced onion
1 tsp minced garlic
2 tbsp canola oil
1 tsp salt
4 c hot water
Place the rice in a sieve and rinse
thoroughly with cold water; set aside.
Heat oil in saucepan over medium heat.
Cook the onion in the oil for about a
minute, then stir in the garlic. Add rice
and salt. Cook and stir until the rice
begins to brown. Pour in the hot water
and stir. Reduce the heat to low, cover
the pan and allow it to simmer until the
water is absorbed - about 25 minutes.
Makes 4 servings.
Over the years on the mission field, especially when certain things are scarce, I have had to make
many substitutions, mostly by trial and error! I find a way to use ALL of my flops, even if I alone eat
them. Consequently, nothing is wasted at our house. If you decide to try any of these, please
remember that with the substitution, your recipe will not have the exact results as it does with all the
usual ingredients.
Recipe Substitutions:
1 tsp Baking Powder = 1 tsp Cream of Tartar + 1/2 tsp Soda, measure by tsp
1 oz of Chocolate = 3 tbsp Cocoa + 1 tbsp Butter, Margarine, Oil, or Shortening
1 c Flour = 7/8 c Cornmeal, 1 1/2 c Bread Crumbs, or 1 c Oatmeal finely ground in Blender
1 c Cake Flour = 7/8 c Flour + 2 tbsp Cornstarch
1 c Whole Wheat Flour = 2/3 c White Flour + 1/3 c each of Wheat Bran and Wheat Germ
1 c Sour Milk = 1 c Milk + 1 tbsp Vinegar or 1 3/4 t Cream of Tartar = 1 c Plain Yogurt
1 c Evaporated Milk = 1 c Water + 2/3 c Powdered Milk or Creamer = 1 c Half and Half
1 c Honey = 1 1/4 c Sugar + 1/2 c any Liquid = 1 c Molasses
1 c Karo Syrup = 1 c Sugar + 1/4 c Water
1 c Brown Sugar = 1 c Sugar + 3 tbsp Molasses
1 tbsp Cornstarch = 2 tbsp Flour
1 tsp Dry Mustard = 1 tbsp Prepared Mustard
1 Egg = 2 Egg Whites = 1/4 c Egg Substitute = 1/4 c Tofu = 2 tbsp Cornstarch = 2 tbsp Arrowroot =
1/2 smashed Banana + 1/4 tsp Baking Powder = 2 tbsp Vinegar in 1/4 c water = 3 tbsp oil + 1 tbsp
Water = 2 tbsp Mayonnaise = 1 Duck Egg = 3-4 Quail Eggs = 1 tbsp unsweetened, unflavored Gelatin
dissolved in 3 tbsp Cold Water, then add 2 tbsp boiling Water = 3 tbsp pureed Fruit = 1 tsp Baking
Powder + 1 tbsp Water + 1 tbsp Vinegar = 1 tsp yeast dissolved in 1/4 c Water
Brazilian Beans
1-2 chopped tomatoes
1 chopped green pepper
1 chopped med onion
2 tbsp minced garlic
2 tbsp olive oil
2 tbsp freshly chopped cilantro
Put beans in Dutch Oven or large pot
with lid. Rinse well twice, then add
enough water to cover by 2". Soak
beans overnight.
In the morning, boil the beans until soft, adding water as
necessary. Be careful to watch the pot until it begins to boil so it
does not boil over! Once boiling, turn down the flame or burner
and either simmer without the lid or with the lid half on.
Cook sausage in a little oil until browned. Add tomatoes, onion,
and bell pepper and sauté briefly. Add this mixture to the beans
in the pot. Salt to taste. Add the cilantro just before serving.
Serve over rice. Makes 10 servings.
