chickens (which include head and feet), packaged panettone (Italian sweet bread) of varying prices and quality,
nuts and dried fruits.

December arrives during the warmest time of year in South America´s summertime.
School aged children are on their summer vacations from the end of November into
February, sometimes only ending a week after Carnaval (which is 40 days before
Easter). Brazilian winter is the opposite of North America´s, so the holiday
decorations and festivities occur when temperatures are their highest. It is not
unusual to have rain. Nativity scenes, artificial pine trees, decorations on the large
avenues, and gift giving are all commonplace. Santa (Papai Noel) is usually dressed
in the stifling hot traditional North American red and white costumes with black
boots and belt and can be found near Christmas in nearly every shopping center.
Panettone (Traditional Christmas Bread, Origin Italy)
This recipe is my own, tried and perfected!
2 1/2 T yeast
3 T sugar
3 c whole wheat or white flour
(using white flour will reduce the fiber content)
1/2 t salt
3/4 c warm nonfat or skim milk
5 T canola oil
3 egg whites
3/4 t vanilla
1/4 c raisins, mixed w/
3 T citron, 1/2 c broken walnuts and dusted lightly w/flour
Put all ingredients, except last two, in order in bread machine.
Keep the raisins and citron in freezer until machine beeps to add
to dough.
OR mix all ingredients, let rise 1 hour, knead, let rise till double,
then bake in greased loaf pan for 30 minutes at 350 degrees F.
Makes 12 slices.

1 chopped onion
2 Tb butter or olive oil
2 chopped carrots
1 chopped sweet green pepper
1 chopped sweet red pepper
1 can of sweet corn, drained
1 can peas, drained
3 cubes chicken bouillon
1/2 cup raisins
6 cups cooked white rice
Salpicão de Frango
2 lbs cooked chicken breast, cut and separated into fine strips
2 carrots, grated
2 sticks celery, finely chopped
1 small onion, grated
1 sweet red pepper cut in fine strips
2 chopped apples
1/3 c olives, cut up
1/3 c raisins
juice of 1/2 lime
salt and pepper to taste
1/2 cup mayonnaise
1 pkg shoestring potatoes
In a large pan, over medium
heat, sauté the onion in
butter for 5 min. Add the
carrots and sauté 5 more min.
Add the peppers, corn and
bouillon, and sauté about 10
min. until soft, stirring
occasionally. Add the peas,
raisins, and a little salt.
Remove from the flame and
stir in the hot cooked rice.
Mix together all ingredients except the
shoestring potatoes. Chill well. Spread
shoestring potatoes on top and serve.
Side dish for 8.
