Mango Smoothie or Popsicles
1 1/2 c peeled, cubed mango
1 1/2 c skim milk
1 Tb honey
1 cup ice chunks
Mix well in blender until
smooth. Pour into glass to
drink with a straw or into
popsicle containers to freeze.
I just love crockpot cooking! Have you tried baking potatoes in it? Just scrub them and put ´em in for
about 8 hours on low. So helpful for Sunday dinner! Make up all the toppings on Saturday and store
in separate covered bowls in the fridge. Put the potatoes in the pot before bed on Saturday night
and there you go - a beautiful spread with no last minute rush!
For chicken soup, cook the whole chicken in the crockpot overnight. Next day, cool and debone, then
put it back in with lots of vegies for another night. It´s wonderfully healthy!
I use winter squash in lots of recipes. For"pumpkin" pie, cut up the squash to fit in the crockpot.
Don´t bother to skin it or remove the seeds. Cook overnight on low. Let cool enough to scrape out of
the skin and remove seeds. Fill freezer containers or measure out for your recipes. So easy and
won´t heat up the kitchen in the summer heat.
