Flan - A Favorite Brazilian Dessert
Traditional Brazilian Flan

2 cups sugar
1/2 cup water
4 cups 2% milk
9 large eggs
1 teaspoon vanilla
Pinch of salt

Stir together 1 cup of the sugar and 1/2 cup of water in a heavy saucepan
over moderate heat until the  sugar dissolves. Without stirring, continue
cooking it until it turns brown, being careful not to burn it.

Pour the syrup into a round 10 x 2 inch cake pan (or 8 x 4 inch); tilt the pan to coat the bottom and sides.
Let this  cool for about 30 minutes while following the remaining steps.

Heat the milk until lukewarm. Beat the eggs, the remaining cup of sugar, vanilla, salt, and 1 cup of the
lukewarm milk until well blended. Add the remaining milk and beat to blend.

Pour into the prepared cake pan (straining it through a metal strainer, if you want).

Place the pan in a larger pan with enough water to come about as high as the custard. Bake at 350
degree oven for 60 minutes or until a knife inserted near the center comes out clean. Allow to cool, then
chill in the pan overnight.

Place a large shallow serving dish upside down over the flan, invert, and remove the pan. There will be a
generous amount of yummy syrup.

Flan Variations

Made with Sweetened CondensedMilk
1 cup sugar (for the caramel)
1 can sweetened condensed milk
Equal volume of regular milk (use the can to measure)
3 eggs

Mix well in a blender. Follow above recipe.

Orange Flan
Replace milk with orange juice and add 2 tsp grated orange peel, no vanilla.

Chocolate Flan
After heating the milk, add 6 ounces bittersweet or semi-sweet chocolate, coarsely chopped. Set aside to
allow chocolate to melt, then continue with recipe, adding 1/2 tsp cinnamon with the other ingredients.

Coconut Flan
Replace up to half of milk with coconut milk. After blending, stir in 1 cup shredded coconut. Can also add 1/4
tsp each cinnamon, nutmeg, and rum flavoring.
