Beijinhos de Côco (Coconut Kisses)
1 can sweetened condensed milk
1 tsp vanilla flavoring
1 TB butter
1 cup shredded coconut
Put ingredients in glass bowl. Mix well then place in microwave for 7 to 8 minutes. Remove and mix well with
wooden spoon. Allow to cool and roll into balls. Roll balls in sugar crystals or coconut.
OR Put ingredients in a saucepan and mix over a low flame. Do not stop mixing or it will burn. When it starts to
thicken so that you can see the bottom of the pan, it´s ready. Allow to cool, then roll into balls. Roll balls in
granulated sugar or coconut.
Casadinhos (Happily Married)
5 cups flour
2 ½ cups sugar
2 ¼ cups margarine or butter
1 TB baking powder
¾ cup cornstarch
5 eggs
5 cups thick guava jam
Put eggs and baking powder in bowl and mix, stir in other ingredients except the jam, saving flour for last. Stir
well, adding additional flour, as needed, until the dough no longer sticks to the bowl or your hands. Roll out to
about a third of an inch thick and cut into very small cookies (use donut center or deep bottle cap). Place on
ungreased cookie sheet and bake in 350 ° F oven till firm (not browned). Stir the jam and fill the cookies. Roll the
sandwiched cookies in fine sugar.
Brigadeiros
1 can sweetened condensed milk
1TB butter
3 TB cocoa
Chocolate Sprinkles
Put first three ingredients in large saucepan over medium-low heat. Constantly stirring to keep from burning, cook
till thickens enough to show bottom of pan when stirring. Pour into a greased dish and let cool to room
temperature (or chill in refrigerator for a few minutes). Grease hands with butter and form into 1 ½ inch balls. Roll
balls in chocolate sprinkles. If balls don´t hold their shape, cook an additional 5 minutes so it thickens up more.
